With help from his Wicklow-born father who had many years of experience in the trades, fellow firefighters, and whomever he could ply with the promise of a few beers for a few hours of work - over the course of eighteen months The Wolfhound Bar and Kitchen came to life. Just three months after opening, The Wolfhound was given a rare full review by The Chicago Tribune where the Full Irish Breakfast stole the show by 'evoking pure joy'.
